description :
Arabica green beans from Rejang Lebong, Bengkulu – Indonesia are grown in highland areas with favorable agroclimatic conditions, contributing to their distinctive quality. The beans are processed using the full wash method, which enhances clarity in flavor and produces a clean, well-defined cup profile.
With a moisture content of approximately 12% and a defect rate of 3–4%, these beans meet consistent quality standards suitable for commercial and specialty applications. The beans are graded at screen size 8, showing a relatively uniform structure with a characteristic bluish-green color typical of well-processed Arabica coffee.
In terms of cup profile, this coffee offers balanced acidity, medium body, and a smooth finish. Flavor notes tend toward light citrus and subtle floral nuances, making it versatile for various roasting approaches, particularly medium roast to highlight its clean and refined characteristics.
Process Stages :
- Selective Picking : Only fully ripe red cherries are handpicked to ensure optimal quality.
- Initial Sorting (Cherry Sorting) : Cherries are sorted using flotation to remove defective or low-density beans.
- Pulping : The outer skin is removed using a pulping machine, leaving beans covered with mucilage.
- Fermentation : Beans are fermented for approximately 12–36 hours to break down and remove the mucilage layer, depending on environmental conditions.
- Washing : Beans are thoroughly washed with clean water to remove any remaining mucilage, resulting in a clean cup profile.
- Drying : Beans are dried (sun-dried or mechanically dried) until reaching a moisture content of around ±12%.
- Hulling : The parchment layer is removed to produce green beans.
- Grading & Sorting : Beans are sorted by size (screen size 8), color, and defect level (3–4%) to ensure consistency.
